Summer Home-Ade Fruit Popsicles

Store brought Popsicles are full of uneeded sugars and other nasty things that our kids don’t need, when you can make your own at home with real fruit.

Here’s how:

2 1/2 cups seeded and cubed watermelon

1 Tablespoon Lemon Juice

1/4 cup Granulated White Sugar

1/2 cup Fresh Rasperries (or any other berry your kids prefer

Place the watermelon, lemon juice, sugar, and raspberries into a blender, and blend on High speed until the sugar has dissolved and the mixture is smooth. Pour the mixture into ice pop molds, and insert sticks or handles. Freeze until firm, several hours or overnight.

Easy Right and so much better than the flavored sugar you buy at the store.

Mayo and Dill Crusted Salmon

Salmon is by far my alltime favorite fish, it’s so versatile. My favorite recipes are the ones that you don’t have to measure so here is one of my favorite dishes using salmon:

1 Fillet of salmon ( any size is fine)

Mayonnaise  (whatever kind floats your boat, but no Miracle whip)

Minced fresh dill (how much you use depends on your taste buds)

Brown mustard ( just a tbs)

1 lemon zested and juiced

Mix Brown Mustard and mayo together

Add lemon zest and juice

once fully incorporated spread all over salmon fillet, next add Dill all over the top.

Put on a foil lined sheet pan and bake at 375 for about 20-25 minutes depending on how you like your Salmon

Super Awesome with roasted Red Potatoes and Asparagus with a dill cream sauce.

Beer Bread

So I love Beer Bread and it’s so easy to make, here is my favorite recipe for it:

3 cups of any type of flour  (I use self rising)

4 Tbs of white sugarhoney-beer-bread11

12 ounces of your favorite beer ( I use a light colored beer)


Now just mix it all up and put in a 8×9 loaf pan that has been buttered

Put into a 350 degree oven for 50-60 minutes or toothpick comes out clean

It’s so awesome with melted butter!!!!

Spicy Cilantro Lime Pesto Sauce Recipe

Cilantro Lime Pesto

Spicy Cilantro Lime Pesto Sauce is easy to make and goes great with Fish Tacos or Fajitas. Its not just for Mexican food either. You can use pesto on some of your favorite American foods. It’s a good spicy condiment for burgers and sandwiches, giving them a blast of flavor you won’t soon forget!


2 Cups chopped Cilantro
4 Cloves of minced Garlic
1/2 to 3/4  cup of Olive Oil
1 Tbs Lime Zest
Juice of 1 lime
1 chopped jalapeno (seeded)


Put Add all ingredients except for the Olive Oil into a food processor and blend. Slowly drizzle in olive oil and pulse until smooth.
